1 tsp dried thyme
2 bay leaves
6 cups beef broth
¾ cup barley
Salt and black pepper – to taste
Directions:
Brown the Beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches, browning on all sides. Remove and set aside.
Sauté the Veggies: In the same pot, add the carrots, celery, onion, mushrooms, and garlic. Cook for a few minutes until softened.
Add Flavor: Stir in the diced tomatoes, thyme, bay leaves, and beef broth. Scrape up any browned bits from the bottom of the pot—this adds great flavor!
Simmer the Soup: Return the beef to the pot, season with salt and pepper, bring to a boil, then reduce the heat to low. Cover and let it simmer for about an hour.
Cook the Barley: Stir in the barley, cover again, and let it cook until both the beef and barley are tender (about 20-30 minutes for quick barley, longer for regular).

Add the Vegetables: Stir in the potatoes and carrots, cover, and simmer for 30 minutes.
Add the Cabbage: Add the cabbage wedges, cover again, and simmer for another 15 minutes until everything is tender.
Rest & Slice: Remove the beef from the pot and let it rest for 10 minutes before slicing. Discard the bay leaves.
Serve & Enjoy: Arrange the vegetables on a serving platter and slice the corned beef. Drizzle some of the flavorful cooking liquid over the top for extra juiciness. Serve hot and enjoy!
